A working distillery in the Sierra foothills.
Copper pot and column stills, running now.
Tasting room and event center opening spring 2027.
No newsletter. We'll write when the tasting room opens and when event dates are released.
Copper pot and column stills, fermenters, and a bottling line. Everything poured here is made here.
A bar and a glass wall onto the production floor, so you can watch a run while you drink what came off the last one.
Indoors and covered patio, plus a terrace under two-hundred-year-old oaks. Weddings, rehearsal dinners, private and corporate events.
A traditional copper pot for character, and column stills for clarity. It's the part of the building people photograph.
Guests eat with the still behind them and the bottling line still warm. It isn't a ballroom pretending to be somewhere — and that's rather the point.
[Event name, month year] — the production floor, set for a seated dinner.
The distillery has been running for a while. What's going in around it is the rest of the place.
Over this winter the tasting room gets its interior — a bar milled from oaks that came off this hill, cut years ago and left to season, and a glass wall onto the production floor.
Outside, the terrace is graded and compacted under the old oaks, ready for ceremonies and long tables by spring. The larger event hall is in review with Tuolumne County, and we'll say plainly where it stands whenever anyone asks.
We'd rather show you our own dirt than someone else's finished building.
July 2026 — grading the terrace under the oaks.
One note when the tasting room opens, and one when event dates are released. Nothing else, and nothing to anyone else.
